BLT Salad

This salad is a nutritious take on the classic BLT sandwich, without the bread. Full of healthy fats, protein, and a tangy homemade dressing, this easy salad is the perfect week night dinner. 

Cooking Time

15-20 minutes

Ingredients

1 lb bacon

3 eggs hard boiled

1 avocado

1 bunch butter lettuce

2 tomatoes 


For the dressing:

1 tbs mayonnaise

1 tbs full fat or greek yogurt

1/2 cup extra virgin olive oil

1 tbs lemon juice

1/2 tsp salt, pepper, & dill

2-3 tbs water

Directions

1. Cook bacon and pat dry.

2. Bring a small sauce pan of water to a boil and add eggs. Reduce to simmer and cook for 15-20 minutes.

3. Meanwhile, assemble the salad. Chop lettuce, tomato, bacon, and avocado and add to large salad bowl.Peel the shells off the eggs, and slice. Add to salad. 

4. Add all ingredients for the dressing to a food processor and combine. Add more or less water for texture and flavor.
