Looking for a rich and decadent treat? These black bean truffles from Thrive Market are your new go to. Whoever thought to pair black beans and chocolate may be a culinary genius. Before you go running in the other direction, trust me on this! The black beans provide a perfect velvet texture while the cacao, coconut oil, and honey sweeten things up. Now you have a sweet treat full of fiber, protein, and anti-oxidants?! Step aside mars bar, there's a cooler kid in town.

10 truffles
1 15oz can organic black beans
1 1/2 tbs coconut oil
1 tbs almond butter
3 tbs raw honey or maple syrup
5 tbs raw cacao powder
1 tsp vanilla extract
sprinkle of sea salt
1/2 cup shredded coconut flakes
Place coconut in the food processor and shred it into fine pieces. Place in a shallow dish.
Strain and rinse black beans. Place beans, coconut oil, and almond butter in food processor and blend until smooth. Add honey or maple syrup, cacao, vanilla, and salt. Blend all ingredients until smooth. Scoop out into a bowl and place in the fridge for about an hour.
After the mixture has become firm, form into small balls, then coat in the coconut. Keep truffles in the fridge. Enjoy!
The thrive market recipe calls for chia seeds to coat the outside of the truffles with. I like to use shredded coconut, but feel free to get creative!
