Coconut Chai Cashew Bites

These chai inspired energy bites will calm that sweet tooth and give you sustainable energy whenever you need a snack. The creamy cashew, almond, coconut oil, and stimulating cinnamon will provide you with healthy fats that won't spike your blood sugar. Keep them on hand for morning or afternoon snacks, or a bedtime treat. 



Cooking Time

15 minutes

Yields

12 energy bites

Ingredients

1 cup chai almond meal 

1/4 cup cashew butter

1/4 cup coconut oil

1/4 cup shredded coconut flakes (unsweetened)

1 tbs each flax seeds & chia seeds

10 pitted dates

cinnamon to coat


To make the almond meal: 

3/4 cup soaked almonds

1 tsp vanilla

1 tsp each cinnamon and all spice

1/2 tsp each ginger & cloves

Directions

1. Combine all ingredients in a food processor, add a splash of water, and blend until a dough is formed.

2. Line an air tight container with parchment paper

3. Form 12 bites from the dough and place in container.

4. Sprinkle with cinnamon and store in the fridge
