This soup is perfect for those cold winter nights when you need a grounding, warming dish full of good for you veggies and greens.

2 tbs olive oil
1 chopped yellow onion
4 cloves garlic
3 diced carrots
4 stalks chopped celery
1 diced turnip
bunch of kale
1 can (or 1 c & 1/2 dry) lentils
1 can chickpeas
1 c crushed tomatoes
4 cups vegetable or chicken broth
2 cups water
Spices:
1 tsp parsley
1 tsp rosemary
1 tsp turmeric
1/2 tsp cayenne
1/4 tsp crushed red pepper
1/2 tsp cinnamon
1. Add olive oil, onion, and garlic to pot and sauté till translucent and aromatic.
2. Add carrots, celery, turnips, and spices. Mix until well combined.
3. Add tomatoes, lentils, and broth and cook on low for 30 minutes.
4. Add chickpeas, kale, and water. Cook on low for an additional 15 minutes.
