Yes you read that right! Sweet potatoes are not only enjoyed in fry form! I love to make this smoothie in the fall and winter seasons. Sweet potatoes are so grounding for the body, something we all crave when braving the windy cold.
4 large chunks of steamed then frozen sweet potato*
2 large pitted dates
2 tbs cacao powder
1 tbs coconut oil
2 tbs shredded coconut
1 tsp vanilla
2 cups almond milk
Place all ingredients in a blender and blend until smooth. Enjoy!
I find that freezing the cooked sweet potato before using it for smoothies helps to improve the texture. Sweet potatoes are always a great thing to have on hand. If you are using some for dinner, try cooking a few more, set them aside, and place them in freezer bags so you are prepared next time you are craving this sweet treat!
