Curried Cauliflower Soup

This curried cauliflower soup is a simple and very nourishing dish for those cold winter nights.

Cooking Time

20-30 minutes

Ingredients

1 head of cauliflower chopped

1 medium onion

3 cloves garlic

2 tbs organic butter, coconut oil, or ghee

1 tbs curry powder

4 cups chicken or vegetable broth

1 cup canned coconut milk

Directions

1. Cook garlic and onion on low heat with 2 tbs cooking oil and curry powder

2. Add cauliflower and cook 3-5 minutes

3. Add broth and boil until cauliflower is tender

4. Transfer to a blender and blend until smooth

5. Transfer back to stove top, and stir in 1 cup of full fat coconut milk
