This chia seed pudding variation features another one of my favorite super foods: turmeric! Turmeric is great for healing inflammation in the body because of it's main active compound curcumin. Curcumin is best accumulated into the body through fats, so blending turmeric with milk in this recipe makes it more bioavailable. Turmeric has a bitter flavor, so if you are not familiar with the taste, be prepared for this pudding to be a little different! I love pairing this one with warm cozy flavors such as sweet potato, squash, cinnamon, and all spice.
Overnight
2 cups
1 1/2 cup almond milk
1/2 cup canned coconut milk
1 tbs raw honey or maple syrup
1 tbs ground turmeric powder
1/2 tsp cinnamon
1/4 tsp ground ginger
1/2 cup chia seeds
For the golden milk:
Combine milk, turmeric, cinnamon, ginger, and honey in a blender. Blend until all spices are absorbed into the milk.
For the pudding:
Combine golden milk and chia seeds in a 16 oz mason jar or sealable container. Stir well and place in fridge overnight or until a gel consistency has formed. Enjoy!
Golden Chia Parfait:
Layer with granola, shredded coconut, and pomegranate seeds for a simple and healthy breakfast or snack.
