Who doesn't love to add a little more green into their life? This recipe was inspired by Kris Carr's green milk recipe. I took the liberty of adding in a few mint leaves for a bit of a twist. For anyone who loves to explore different juice, smoothies, and elixirs, I highly recommend her book Crazy, Sexy, Juice. Many people do not know that it is very easy to make nut milk at home with just a few ingredients.
Overnight
2 cups
For the green milk:
1 cup soaked almonds
3 cups water
2-3 pitted dates
2 kale leaves, stems removed
2 cups spinach
Handful of fresh mint leaves
1 tsp vanilla
pinch of salt
For the pudding:
1/2 cup chia seeds
1 tbs raw honey
For the milk:
Place all ingredients in a blender and blend until smooth. Using a cheese cloth or nut milk bag, pour milk over top the cloth into a large bowl. Gather the cloth at the corners and squeeze the remaining milk from the pulp. Discard the pulp or save for future recipes. Milk will keep about 2-3 days.
For the pudding:
Place chia seeds and honey into a 16 oz mason jar or air tight container. Add 2 cups of green milk. Stir and place in the fridge overnight or until gel consistency is formed.
Parfait:
Layer with greek yogurt and and granola for a refreshing and light treat.
