Pumpkin Chia Pudding

Are you a fan of pumpkin pie but not a fan of the added sugar? Love it so much you wish you could get away with eating it for breakfast? This pumpkin chia pudding is your new best friend! Sweet, fluffy, and full of flavor, serve this easy pudding with fruit, yogurt, and granola for your new go to breakfast parfait. Pumpkin is full of vitamin A, potassium, and fiber as well, making it a great way to start the day right.

Ingredients

1/2 cup + 1 tbs pumpkin puree 

1 and 1/2 cup almond milk

1 tsp pumpkin spice

1/2 tsp cinnamon

1 tbs maple syrup

1/2 cup chia seeds

Directions

1. Blend pumpkin puree, almond milk, spices, and maple syrup in a blender until smooth

2. Place chia seeds in a sealable jar or container. Add pumpkin mixture and stir

3. Place in fridge overnight or until chia seeds expand and pudding forms

4. Serve for breakfast or as a snack with fruit, granola, or yogurt
