This brussel sprout salad is seriously addictive! Sweet, crunchy, and a bit nutty, the texture and flavor combo is perfect for winter or fall.
Brussel sprouts are full of fiber that help feed your good gut health bacteria. I lightly cooked the brussel sprouts in this recipe, to help with digestion and to make sure your body is able to absorb all the vitamins and nutrients this food has to offer!

2 cups brussel sprouts, ends cut off
1 small onion
3 cloves garlic
1 tbs cooking oil (olive oil, ghee, or organic butter)
1 red apple thinly chopped
1/2 cup walnuts
For the Dressing:
3 tbs olive oil
2 tbs apple cider vinegar
1 tbs lemon juice
1 tbs maple syrup
2 tbs tahini
Sesame seeds for garnish
1. Place 2 cups of brussel sprouts in a food processer and pulse until chopped.
2. Cook garlic and onion on low heat in cooking oil until translucent. About 2 minutes. Add brussel sprouts and lightly cook until soft.
3. Add brussel sprouts, onion, & garlic to a large salad bowl. Add apples and walnuts and stir.
4. To make dressing, combine all ingredients to small sealable jay or container and shake until well combined. Pour evenly over salad.
5. Garnish with sesame seeds and serve slightly warm, or pop it in the fridge for 5 minutes to serve cold.
