Southwest Quinoa Salad

I love quinoa salads! They are so versatile and easy to make. This southwest quinoa salad is full of fresh veggies and protein packed ingredients.

Ingredients

2 c cooked quinoa

1 red bell pepper diced

1 small red onion diced

1 firm tomato diced

1/2 c frozen corn

1 can black beans drained

1 avocado

1/4 c chopped cilantro


3 tbs olive oil

1 tbs red wine vinegar

1 lime juiced

Directions

Place a large sauce pan on low heat and drizzle with cooking oil. Add pepper and onion, and cook lightly for 2-3 minutes. Add cooked quinoa, black beans, tomato, and corn and stir. Drizzle in olive oil, vinegar, lime juice, and cilantro. Remove from heat. Refridgerate and serve topped with chopped avocado.
