Strawberry Chia Pudding

Ingredients

1/2 cup chia seeds

1 tbs vanilla extract

2 cups strawberry nut milk


For the nut milk:

1 cup soaked nuts (your choice)

1 cup strawberries

1 tsp vanilla extract

3 cups filtered water

sprinkle of sea salt

Directions

For the milk:

Place all ingredients into a blender and blend until smooth. Wrap a nut milk bag or cheese cloth around a large bowl or pitcher. Pour milk over cheese cloth. Squeeze remaining milk through the cheese cloth into the bowl. Discard the pulp, or store in the fridge for future recipes. 


For the pudding:

Add 1/2 cup chia seeds to the bottom of a 16 oz jar or container. Add vanilla and strawberry milk and stir until well combined. Seal jar and place in fridge overnight or until a gel consistency has formed.


Parfait:

Layer with full fat greek yogurt OR coconut yogurt, shredded coconut, sliced strawberries, and crushed graham crackers for a delicious breakfast parfait or snack.
