These sweet potato brownies will have you thinking twice about boring old boxed brownies. They are so rich in flavor, and completely sugar free AND gluten free. Bring these to your next picnic, family gathering, or office party and pleasantly surprise all the health skeptics in your life!

1 cup pureed or mashed sweet potato
2 eggs
½ cup honey or maple syrup
¼ cup coconut oil
1 tsp vanilla
½ cup almond flour
⅓ cup cacao powder
¼ tsp baking powder
¼ tsp salt
½ cup dark chocolate chips (optional)
Add flour, cacao powder, baking powder, and salt to a medium sized bowl and combine. In a separate bowl, stir together melted coconut oil, eggs, sweetener, vanilla, and sweet potato in that order until well combined. Fold into dry mixture and stir. Add to a greased 9X9 baking sheet and bake at 350 degrees for 20 minutes.

This recipe is taken from the folks at sweetpotatodiet.com. I have replaced the coconut flour with almond flour, and given the option to use maple syrup along with honey for your sweetener of choice. I also like to puree my cooked sweet potato in a blender before adding to the recipe. It makes the batter much smoother and easier to work with.
