These energy bites are a great snack for sustainable energy throughout the day. They are low in sugar and high in heathy fats, meaning there is no unwanted crash a few hours later. You can be very creative with this recipe and sub in different ingredients to your liking. Store your energy bites in the freezer or fridge so they keep their dough like consistency. Enjoy!
1 cup pitted dates
1/4 cup nut butter (I prefer cashew butter)
1/4 cup cacao powder
1/4 cup roasted almonds
1/4 cup pepitas (pumpkin seeds)
1/4 cup unsweetened coconut flakes
a dash of cinnamon
Add all ingredients to a food processor and blend. Add a splash of water and blend until a sticky dough is formed. Line a tupperware container with parchment paper. Form dough mixture into balls and place on parchment paper. Store in the freezer. Makes 10-12 balls.
