I love chia seeds. They are so versatile. You can put them on salads, on your breakfast bowls, in your smoothies; you can use them to make home made jam; the list goes on and on. But my favorite way to enjoy this nutrient dense powerhouse? Chia Seed Pudding.
This recipe is unbelievably simple. I use it to make parfaits, breakfast bowls, desserts, or I just eat it straight out of the jar. It is packed full of protein and good for you fats that will leave you feeling full and satisfied.
Overnight
2 cups
2 cups almond milk
1/2 cup chia seeds
1 tbs raw honey or maple syrup
1 tbs vanilla extract
Combine all ingredients in a 16 oz mason jar or sealable container. Stir. Place in fridge and let set overnight or until a gel consistency has formed. Top with fruit, nuts, seeds, and yogurt for a healthy breakfast or snack.
