(N)ice cream is my favorite sweet treat out there. It is made by blending frozen bananas into a smooth, creamy texture and tastes just like (if not better than) ice cream! This recipe is so simple, you'll find yourself making it all summer long.
2-3 servings
2 frozen bananas
1/2 cup canned coconut milk
2 tsp vanilla extract
1 tbs sweetener of choice (honey, maple syrup, stevia, monk fruit)
Blend all ingredients on high in a food processer until smooth texture is formed. Store left overs in a sealable jar in the freezer and thaw slightly before eating.
